Now that
October is here and autumn is in full swing it's time to start
thinking about warming family dishes. We've got a stack of potatoes
from our allotment so these make a good
base to start with. I had a leek that needed using up but an onion could easily be used in its place. Add in some family favourites of hotdogs and
baked beans plus a dash of herbs and spices and you've got a big bowl
of comfort food in no time at all.
Serves 4
Equipment:
Large frying pan
Ingredients
2tbsp
(30ml) Oil
1 Leek, chopped
1lb
5oz (600g) Potatoes, peeled and diced
½
pint (280ml) Beef stock
¼
tsp (1.25ml) Smoked paprika
½
tsp (2.5ml) Dried oregano
1tbsp
(15ml) Tomato purée
8
Hotdogs, chopped into 3 pieces each
420g
tin Baked Beans
Method
Heat
the oil in the frying pan.
Add
the onion and potatoes and cook until the potatoes are browned all
over.
Add
the beef stock and then stir in with the paprika, oregano and tomato
purée.
Bring
to the boil and cook until the potatoes are tender and most of the
liquid has evaporated.
Add
the hotdogs and baked beans and heat through for about 5 minutes
before serving.
