Bacon, cheese and tomato filo parcels

Have you ever made your own filo pastry? I very much doubt I will find many people who have attempted it. I've seen it being made on the Great British Bake Off and an episode of one of Rick Stein's many travels. One the key things you need is a lot of space to roll it all out and since I only about 30cms of flat space I feel I have a good excuse to buy it rather than make it myself. Anyway if a bought packet of filo pastry is good enough for Mary Berry it's good enough for me.

I had had a packet of filo pastry in the freezer for some time and decided it needed using up. Also in the freezer was half a packet of cooking bacon and the rest of the ingredients are a fridge raid. I'd also say that the addition of some chopped onions or peppers would be good in these little parcels. Usually filo pastry is renowned for being tricky to work with but if you pile up the layers they become surprisingly strong. Once cooked each of these little parcels made a great lunchtime alternative to sandwiches or part of your picnic packup.

Makes 12
Equipment: Small frying pan, 12 hole deep muffin/cupcake tin

Ingredients

300g (10½) Cooking bacon, chopped
6 Filo pastry sheets
1oz (28g) Butter, melted
6 Cherry tomatoes, halved
Black pepper
1oz (28g) Cheddar cheese, grated

Method

1. Pre-heat the oven to 200°C/Gas mark 5.
2. In a frying pan dry fry the bacon until cooked and put to one side.

3. Lay out the filo sheets and cut in half so you have 12 squares.
4. Fold each of the squares in half and then half again.

5. Place a filo square into each of the muffin cups.
6. Brush with the melted butter and then bake for 10 mins.
7. Take out of the oven and evenly fill each one with the bacon pieces.
8. Place a cherry tomato half in each one, give each one a grind of black pepper and then finish off with the cheese.
9. Bake for 5 more minutes.

  1. These sound very moreish with the bacon, cheese and tomato. I've never made my own filo and was impressed that they did it on GBBO a while ago. I'd need a much bigger kitchen to attempt that! Thanks for sharing with The Pastry Challenge :)
