Love Cake June 2017 round up

We went indulgent for this month's Love Cake theme of Brownies and Blondies. There's so many recipes out there for this gooey chocolate cake but which ones have we gone for this month? Let's have a look what everybody has been baking.
Our resident chocolate queen Choclette from Tin and Thyme couldn't miss this month's theme and gave us Coffee Brownies with Almond Nut Butter. These have been given the Choclette healthy makeover with coconut oil and nut butter instead of butter to make them dairy free. There's also 85% dark chocolate in it plus coconut sugar instead of refined sugar.
With a box of chocolates still lying around from Christmas Galina at Chez Maximka decided it was time to use them in some baking. Inspired by a magazine recipe she tweaked it to her own taste and came up with Ferrero Rocher brownie bites. What would the Ambassador think of these?!
In Australia our Green Gourmet Giraffe Johanna went vegan with her Brownies with optional dulce de leche swirl. These brownies can be made using just cocoa powder for the chocolate hit but vegan chocolate chips can also be added in. For the dulce de leche swirl Johanna heated up coconut condensed milk.
Feeling fruity this month was Shaheen at Allotment2Kitchen with Easy Cocoa Brownies with Tayberries. A squidgy treat of rich chocolate brownies have been given a tangy topping with the additional of seasonal tayberries.
I decided to take a batch of brownies and make them even more chocolatey and sticky and turning them into Chocolate and marshmallow brownies. After baking the brownies the marshmallows and chocolate pieces are spread on top and then returned to the oven until just melted.

  2. Thanks for inspiring me to make brownies for this event and now that I have read the round up I just want to make more brownies - one of my favourite treats - how did I get through my childhood without ever knowing about them!
