Sausage, baked bean and potato bake

What could be more of a family favourite meal than sausages, baked beans and potatoes? On their own a good, tasty meal but not that exciting. So this is my way of jazzing it up a bit, adding some veggies and cooking all in one pan – less washing up! If you want to add extra veggies or save on the chopping up add some frozen peas or a mixed vegetable selection.

Eagle-eyed readers may notice the pan in the photo is not my old Le Creuset Racing Green one. Sadly it has died a death because the enamel started to come off it. As it was made before 2000 it couldn't be saved. In its place I bought one from Sainsbury's which was on offer at £29.99 - £100 cheaper than a new Le Creuset one!


Equipment: Cast iron 30cm pan or large frying pan and open-proof dish.

Ingredients

1 tbsp Oil, vegetable or sunflower
8 Pork sausages
1 Onion, sliced
2 Carrots, diced
1 tbsp (15ml) Plain Flour
¼ pint (140ml) Milk
1 tbsp (15ml) Henderson's Relish or Worcestershire Sauce
1 tbsp (15ml) Tomato purée
400g tin Baked Beans
1lb (500g) Potatoes, unpeeled, sliced thinly
3½ (100g) Grated cheese

Method

1. Pre-heat the oven to 200°C/Gas mark 6.
2. Heat the oil in the pan and brown the sausages.
3. Add the onions and carrots then cook until the onions have softened.
4. Sprinkle over the flour and cook for 1 minute while stirring.
5. Mix in the milk and stir until thickened.
6. Add the Henderson's or Worcestershire Sauce, tomato purée and baked beans. Stir until all combined.
7. If needed transfer to an oven-proof dish.
8. Layer the sliced potatoes on top.
9. Sprinkle over the cheese.
10. Cook for 20 minutes.
