Cut and Come Again Cake

Cut and Come Again Cake mixed dried fruit recipe baking
Earlier in the year the theme of one of the Clandestine Cake Club meetings I went to was 'Friendship'. It's a very apt theme for the meetings for in the 3½ years I've been going to the Clandestine Cake Club I've met some lovely people and forged some lasting friendships. My first thought that came into my head when the theme was announced was the song, 'If I Knew You Were Comin' I'd've Baked a Cake.' So I figured that if you didn't have much notice of a friend coming round for a cup of tea and a natter you would need a cake that was quick and easy to bake but one which you would want to keep coming back to and cut another slice. Is there any other cake that fits this description better than a Cut and Come Again Cake? It's a light fruit cake with just a hint of spice for flavour. When baked in a small enough tin from start of preparation to coming out of the oven it can be all done in an hour.

Equipment: Round 6in (15cm) tin greased and lined, large bowl, skewer.

Ingredients

8oz (225g) Self-raising flour
½ tsp (2.5ml) Ground nutmeg
½ tsp (2.5ml) Mixed spice
4oz (115g) Unsalted butter
2oz (60g) Soft light brown sugar
4oz (115g) Mixed dried fruit
2 Large eggs, lightly beaten
¼ pint (140ml) Milk

Method

1. Pre-heat the oven to 180°C/Gas mark 4
2. In a large bowl mix together the flour, nutmeg and mixed spice.
3. Rub in the butter so it resembles breadcrumbs.
4. Add the sugar and dried fruit. Mix well and make sure all the dried fruit has been covered by the mixture.
5. Add the beaten eggs and milk and stir well so everything is combined.
6. Spoon into the tin and bake for 40 minutes until a skewer comes out clean.
7. Turn out of the tin to cool on a wire rack.

  1. This came will always have fond memories off me because my mum had made it regularly as long as I can remember. It's hard for me to believe that I never used to like fruitcake - so many wasted years! It put a smile on my face to see this cake featured in your post :)

    1. My children don't like fruit cake. If they did I would more fruit cakes. I've never had a problem with it!

    1. It's really quick to put together and bake. I know sometimes fruit cakes can take ages to bake.

  3. I was intrigued by the name of this cake - I just had to come and take a look.

    My husband is a huge fruit cake fan and I rarely make them for him because they're so slow to bake. I'll have to add this to my "to bake" list to try out for him sometime.

    I'm also making a resolution to give my cakes cuddly names. It's so much better than just "Quick fruit cake" :-)
