Cereal crumb cake

We get through a lot of cereal here at JibberJabber Towers but the one thing that bothers me is the amount of waste. At the bottom of each packet there is a pile of crumbs. If you try to eat it you'll feel like you're eating dust. I've tried to tempt the birds with it but I think I have spoilt them with seed and fatballs and the fussy little feathered things won't touch the cereal. So what do I do with all these crumbs? Well, I have long lived by the theory that whatever food you have can be baked into a cake so this what I did.

This is a take on a fruited tea cake but takes just an hour to soak up the fruit. I used cold tea leftover from the breakfast teapot. On this occasion it was Earl Grey. We are quite sophisticated here but my brother still thinks I am a barbarian for having a propensity to drink out of mugs rather than tea cups. As with most fruited tea loaves this gets better a few days after making it...if you can leave it that long.

I used bran flakes in this recipe so with no eggs or added fat my version was a vegan cake. Obviously this will depend on what cereal you use as many do contain cow's milk or chocolate in some form.
Equipment: 1lb (450g) loaf tin lined, large bowl

Ingredients

2½ oz (65g) Cereal crumbs
6oz (170g) Mixed dried fruit
5oz (140g) Demerara sugar
8 fl oz (235ml/1 cup) cold black tea
5oz (140g) Self-raising flour
½ tsp (2.5ml) Mixed spice

Method

1. Put the cereal, fruit and sugar in a bowl and cover with the cold tea. Stir the mixture altogether and leave to soak for at least an hour.
2. Pre-heat the oven to 180°C/Gas mark 4.
3. Mix in the flour and mixed spice and spoon it into the lined loaf tin.
4. Bake for an hour and 15 minutes until the skewer comes out clean. If necessary cover the cake whilst baking to stop the top from burning.
5. Turn out of the loaf tin, remove the liner and leave to cool on a wire rack.
