This April
has lived up to expectations with showers but also a heatwave! Never
mind the weather as it is always the perfect temperature for a slice
of cake! Let's see what has been baked this month.
This month we start
with a showstopper from Kate at Gluten
Free Alchemist. A much needed birthday treat translating itself
in the form of this Celebratory Orange Cake. A totally gluten free
extravaganza of three almond cakes layered with orange curd
buttercream and topped with blood orange jelly.
For a truly indulgent treat then look no further than these Triple Chocolate Almond Brownies from Choclette over at Tin and Thyme. They are naturally gluten free being made from almonds. The triple chocolate comes from melted dark chocolate mixed with cocoa powder then chunks of white chocolate added in.
I couldn't let our
national day go without marking it with cake. To get the full red
cross effect I made St.
George's Day cupcakes. The base for this is my tried and test
vanilla sponge cupcake recipe. They are then simply topped with glacé
icing and cherries. For any time of year just keep the cherry whole
in the middle.
If vanilla isn't your
thing then try my chocolate
muffins. Quick to make and no need to get the whisk out. Perfect
if you are in a hurry or as an after school treat.
Finally for this month
I did a switch and replaced lemons for an extra zesty lime
drizzle traybake. This is an easy all-in-one recipe which makes a
lovely light cake.
I'll be back in a
couple of days with our baking inspiration for May. There's wedding
bells in the air!
