We gone
theme-free for our monthly Love Cake challenge for 2018. This month I
took my inspiration for the first bake of the year from a popular
January celebration. On 25th January the birthday of
Scottish poet Robert Burns is celebrated by Scots the world over. One
of the most popular traditions is the cutting of a haggis while
Burns' poem Address to a Haggis is
recited.
Of
course I am concerned with all things cake when it comes to any kind
of feast or festival. I chose a Scottish
seed cake as it was traditionally served on Auld Hansel. This was
the first Monday after 12th
January but when the calendar switched from the Julian to Gregorian
calendar the date was brought forward to the first Monday after
Hogmanay. With Burns' Night falling in January as well it makes the
perfect cake for this month. The seeds in it are caraway seeds and
then candied peel is added to the mix. For that Scottish touch a nip
of whisky is added.
