Love Cake June 2018 round up

It's been hot, hot, hot this month and not the weather to be in the kitchen with a hot oven on! Whatever the weather a slice of cake is always welcome and here's our selection of summer themed bakes this month.
For the local baking competition Miss JibberJabber got creative with her Summer Festival Glamping Cake. Based around a lemon Madeira cake I has been put together with elderflower buttercream and coloured and flavoured icing. Some Mikado biscuits provide the perfect structure for keeping our wigwam upright.
I have been busy this month baking for garden openings. My first cake of the month was a vegan lemon and blueberry cake. I used soya milk and sunflower oil in place of dairy plus both baking powder and bicarbonate of soda to give it a good rise.
Another baking session saw four different cakes to go on the table for a private garden visit for the National Garden Scheme. I went for some of the classic recipes such as Victoria sponge cake, tea loaf, gluten free lemon and yoghurt cake and a cherry, almond and lemon cake.

I'll be back in a couple of days with July's Love Cake. I already have a list of cakes I need to bake next month!
