Pesto fish bake
We get through a lot of jars of pesto in our house. Once a week Miss JibberJabber has pesto pasta to take to school for lunch. Although it keeps well in the fridge, which means you can get two weeks worth of lunches, there still seems to be plenty left over. I've been adding the pesto to sandwiches at lunchtime but there's only so much cheese one person can eat.

So what do you do with a problem like pesto? The answer is turn it into a solution for other leftovers. If I've got some dry looking bread crusts I whizz them in breadcrumbs and then freeze. Something else this dish is a solution for and that is the cooking of fish. Many people are put off fish because they believe it is difficult to cook properly. This couldn't be simpler and makes for quick midweek family dinner.

Serves 4
Equipment: Large non-stick baking tray.

Ingredients

4 White fish fillets such as cod, haddock, pollock or coley
3 tbsp (45ml) Pesto
3oz (75g) Breadcrumbs
3½ (100g) Grated hard cheese such as cheddar

Method

1. Pre-heat the oven to 180°C/Gas mark 5.
2. Put the fish pieces on the baking tray.
3. Mix together the pesto, breadcrumbs and the cheese. Spread over each fish piece.
4. Cook for around 12-15 minutes (depending on the thickness of the fish).until the fish is cooked through.
