Honey loaf cake

Honey loaf cake recipe baking picnic
Sometimes when it comes to cakes I find that the ones I bake time and time again are not the ones with complex flavour combinations or exotic ingredients but far plainer and simpler cakes. We had a family meet-up of four generations a couple of weeks ago and I knew that the right cake for our picnic would be a honey cake. No fancy decoration or messy fillings to get spoilt on the journey. Just the ticket to pack up for a picnic which happens to be the theme for this month's Love Cake.

Equipment : 2lb (1kg) loaf tin lined and greased or a loaf tin liner, large saucepan.

Ingredients

6oz (175g) Unsalted butter or baking spread
6oz (175g) Clear, runny honey
4oz (115g) Demerara sugar
2 Large eggs
2 tbsp (30ml) milk
8oz (225g) Self raising flour

Method

1. Using the large saucepan heat the butter, honey and sugar. Stir together until the sugar and butter has dissolved and melted. Leave to cool slightly.
2. Pre-heat the oven to 180°C/Gas mark 4.
3. Crack the eggs into the mixture one at a time along with 1tbsp (15ml) of the milk.
5.Sprinkle over the flour and then stir well until it has all combined and the mixture is smooth and has a pouring consistency.
6. Pour the batter mixture into the tin and bake for 40 minutes until a skewer comes out clean.
7. Leave in the tin for 10 minutes and then take out of the tin and remove the lining paper. Leave to cool completely on a wire rack.

  2. You're so right that sometimes the simple recipes are the best. I find that I'm much more likely to make them because I can fit them into my day more easily and I've usually got all of the ingredients I need in the cupboard. I love a nice honey cake and this one looks delicious.
