It can be tricky getting back into the school routine. Getting up early, wearing a uniform, making sure the school bag is packed and that's before you have even left the house in the morning. By the time your little darlings have been dragged back from school all of you are frazzled and the day most certainly isn't done yet. New homework for maths, spelling and reading seems to appear each night. Then there are the after school activities not just for the kids but the adults as well. Inbetween all of this somehow you need to fit in meals that are quick, tasty and with a bit of good stuff thrown in. To the rescue Birds Eye!
I've never been one for
doing a weekly shop or indeed a meal plan for Monday to Friday. Life
changes so much and I like to dream up new meals rather than getting
stuck in a rut. I find it handy to keep a number of things in the
freezer which can be cooked from frozen but mixed up with other
ingredients I've got in. One meal that the whole family always enjoys
is chicken burgers using Birds Eye Chicken Quarter Pounders. They
have a bubbly coating and are made from chicken breast. We serve them
in a wholemeal bun with little gem lettuce, sliced tomatoes and
cucumber with a couple of potato waffles on the side.
If you want to get a get hit
of veggies with your dinner try some Birds Eye Beef Grills in wraps.
While the Beef Grills are cooking stir fry a selection of red and
yellow pepper strips with carrots and onions. When the Beef Grills
are ready slice them as well and then fill the wraps with all the
ingredients. I served them with potato wedges baked with some fresh
rosemary.
Finally for a Friday night
treat we like to eat a bit later (hence the flash photography!) and
have an Indian or Chinese meal. We've never been ones for takeaways
preferring instead to cook something at home. However by Friday
evening the thought of slaving over a hob full of pans is not
appealing so here's a combination that works really well. Cook Birds
Eye Sweet and Sticky Chicken Chargills served with Birds Eye Rice
Fusions Cantonese Vegetables.

I do meal plan, and only shop once a week BUT I always keep a few things on hand in the cupboard or freezer for those days when things don't go to plan!

ReplyDeleteI would give anything for easy after school meals lol, but with restricted diets I spend most of every morning cooking!
ReplyDeleteI try to plan out meal the week before and sometimes it works, sometimes not. We always have frozen veg in the freezer on standby and chickpeas for when I get caught out.
